Turn Your Bear Harvest into Delicious Bacon with Hi Mountain Seasonings

RIVERTON, Wyo. (Sept. 30, 2025) — Hi Mountain Seasonings, the trusted brand for seasoning solutions, introduces a new and innovative recipe designed to elevate your wild game experience. Using Hi Mountain’s popular Buckboard Bacon Cure, hunters can now transform their bear roast into mouth-watering Canadian bacon, adding a new level of flavor to this often overlooked meat.

Bear hunting has gained more attention lately, with hunters finding new opportunities across North America. However, despite the rising interest in bear hunting, many people are still hesitant to eat bear meat, often due to misconceptions about its flavor or texture. Hi Mountain Seasonings aims to change that by offering a tasty and simple way to prepare bear meat that will surprise and satisfy even the most skeptical palates.

“Bear meat has a bit of a mystery around it,” said Hans Hummel, president and owner of Hi Mountain Seasonings. “But we’ve seen how game meat, when properly handled and seasoned, can be just as flavorful as any other meat. Our new recipe for bear bacon is a game-changer, turning bear roast into something delicious and versatile. It’s the perfect way to bring a new dimension to your harvest.”

Bear meat is often wrongly associated with tough, stringy protein, but with the proper preparation and Hi Mountain’s Buckboard Bacon Cure, you can easily transform your bear roast into crispy, savory bacon. Not only does this new recipe bring out the best in the bear meat, but it also highlights the importance of proper handling in the field. When cooked to a safe internal temperature of 165°F, bear meat can be as tasty and safe as any other game meat.

Hi Mountain Seasonings’ Buckboard Bacon Cure combines a perfect blend of seasonings to enhance the flavor of bear roast, making it tender, flavorful, and suitable for a variety of dishes. Whether it’s a hearty breakfast or a savory lunch, bear bacon can be used in everything from classic BLTs to salads and gourmet main courses.

Canadian Bear Bacon Recipe

Ingredients:
1 Hi Mountain Buckboard Bacon Kit
1 Bear Roast
Brown Sugar
Maple Syrup (just enough to glaze all sides of the roast)

Instructions:

Follow the instructions in the kit to determine how much Bacon Cure to apply to the roast. The amount depends on the size of your roast. Place it in a non-metallic container and refrigerate. (The roast shown was cured for 6 days. After 4 days, brown sugar was applied to all sides of the roast and it was put back in the refrigerator. For a smaller roast, you would cure it for a couple of days less than a larger one.)

After the curing time, follow the instructions for rinsing and soaking the roast. Then air-dry it as directed.

Set your smoker or pellet grill to 200°F and smoke until the internal temperature reaches 165°F. When the roast hits about 145 degrees, glaze it with maple syrup and keep smoking until it reaches your preferred temperature.

Remove the bacon from the smoker and let the roast cool on a rack. You are now ready to cook some bacon. Slice to the thickness you like and fry up with some butter or saved bacon grease from regular bacon previously cooked. I prefer to use bacon grease to fry the bear bacon.

Key Benefits of Bear Meat:

  • Nutrient Dense: A 3-ounce serving of bear meat contains more iron than the daily iron requirement for men, along with a higher zinc content than lean beef.
  • Flavorful: Bears that eat berries, acorns, and other vegetation provide better-tasting meat, especially when harvested in the fall.
  • Versatile: Bear bacon can be used in an array of dishes, from traditional breakfasts to unique main courses and sweet treats.

No matter when or where your bear was harvested, Hi Mountain’s bacon recipe offers an easy, tasty way to transform this wild game meat into a culinary delight. And with Hi Mountain’s selection of game recipes on its website, hunters and home cooks can discover new methods for preparing their harvest, making every meal a flavorful adventure.
