Easy Pumpkin Bread Recipe – A Fall Favorite

Pumpkins are cheerful autumnal decorations. Due to their brilliant color and abundance this time of year, people enjoy them as fall decorations. But – pumpkins are not just for decorating!  They are the shining stars of many recipes. Not only are they tasty, but they are also low-cal. Did you know that one cup of pumpkin cubes has just 30 calories? What’s even better is that they are nutritious! Pumpkins contain great things for the body to include fiber, potassium, vitamins A & C, antioxidants, and more. Enjoy our recipe for pumpkin bread – requiring one cup of solid-packed pumpkin puree (not the sweet pumpkin pie filling). This method is a “quick bread” recipe as it does not require any kneading or rising time – making it super easy to prepare!

Easy pumpkin bread recipe

(Makes two 8 x 4 x 2-inch loaf pans – or five 5 x 2 ½ x 2-inch mini loaf pans)

Ingredients:

  • 5 large eggs
  • 1 ¼ cup vegetable oil
  • 1 (15 oz.) can pure pumpkin puree (NOT sweet pumpkin pie filling)
  • 2 cups flour
  • 2 cups granulated sugar
  • 2 packages (3 oz. each) cook ‘n serve vanilla pudding mix (NOT instant)
  • 1 teaspoon baking soda
  • 1 ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • Butter for greasing the pans

Directions:

Lightly grease the baking pans with butter. Set them aside. Preheat oven to 325° F. In a large mixing bowl, beat the eggs. Add the oil and pumpkin puree and beat until smooth. In a separate medium bowl, combine the flour, sugar, pudding mixes, baking soda, cinnamon and salt. Gradually beat the flour mixture into the pumpkin mix. Pour batter into the butter-greased pans. Bake accordingly.

Note that baking times vary based on loaf-pan size. See below for bake time. Watch pumpkin bread carefully toward the end of baking time. To test for doneness, a toothpick inserted in the center should come out clean.

For two 8 x 4 x 2-inch loaf pans, bake for approximately 75 minutes.

For five 5 x 2 ½ x 2-inch mini loaf pans, bake for approximately 50-55 minutes.
