Transitioning from Spring Bear Hunting to Summer Grilling with Hi Mountain Seasonings

RIVERTON, Wyo. Smoked Bear Loin Roast Recipe

Ingredients:

  • 1 bear back strap
  • 12 oz coffee-flavored beer
  • Hi Mountain Seasonings Rib Rub
  • Salt
  • Fresh-ground coffee
  • 1/2 cup maple syrup

Directions:

  1. Cooking Bear Meat Safely
  2. Trim anyexcess fat from the bear backstrap. Place it in a nonporous container and pour in the coffee-flavored beer. Allow it to marinate for a couple of hours. Once it’s marinated, remove the meat and pat it dry with a paper towel.
  3. Apply salt, a liberal amount of Hi Mountain Seasonings Rib Rub, and fresh-ground coffee on all sides of the roast.
  4. Place the seasoned bear backstrap in a nonporous container and refrigerate for a couple of hours.
  5. Remove from the refrigerator and let it stand at room temperature for 60 minutes.
  6. Preheat your smoker or pellet grill to 250°F.
  7. Place the bear back strap in the smoker/pellet grill. During the smoking process, glaze the roast with maple syrup on both sides.
  8. Smoke the bear back strap until the internal temperature of the roast reaches 165°F.

Cooking Bear Meat Safely

Since bears can be carriers of Trichinella spiralis (the parasite that can cause trichinosis in humans), it’s crucial to follow the proper cooking techniques to ensure the meat is safe to eat. Here are some important tips for cooking bear meat:

  • The internal temperature of the thickest part of the meat must reach 165°F for at least 3 minutes. For extra safety, heat the meat to 170°F to ensure it is thoroughly cooked.
  • Continue cooking until there is no trace of pink meat or fluid, paying close attention to areas around joints and near the bone.
