Hi Mountain Seasonings Helps Hunters Celebrate the Dove Opener withA Flavorful Recipe

RIVERTON, Wyo. (Aug. 28, 2025) — As hunters across the country prepare for one of the most anticipated events of the fall – the Dove Hunting Opener – Hi Mountain Seasonings is ready to help sportsmen and women make the most of their harvest. With its easy-to-use brines, rubs, and seasonings, Hi Mountain has developed a delicious recipe that will elevate your dove opener celebration from the field to the table.

The Dove Opener, typically held the first weekend of September in many states, marks the beginning of the fall hunting season and is celebrated as much for its tradition and camaraderie as for the challenge of hunting doves. For many, it’s the perfect kickoff to the autumn and is a day filled with family, friends, and the outdoors, often ending with a great meal.

“Dove hunting is about more than just hitting your limit; it’s about enjoying time together and creating memories,” said Hans Hummel, owner and president of Hi Mountain Seasonings. “We wanted to provide hunters with a recipe that makes the most of their harvest and adds a delicious twist to this time-honored tradition.”

Hi Mountain Seasonings Smoked Dove Recipe

Ingredients:

  • 20+ dove breasts, bone-in
  • 1 packet Hi Mountain Seasonings Game Bird Brine
  • 1 brine bag
  • Hi Mountain Seasonings Trail Dust
  • Olive oil

Glaze:

  • 6 tbsp butter
  • 4 tbsp brown sugar

Directions:

  1. Mix Hi Mountain Seasonings Game Bird Brine with one gallon of ice water in a brine bag or non-porous container.
  2. Add cleaned dove breasts and refrigerate for 24 hours.
  3. Rinse in cold water, then soak in fresh water for 90 minutes, changing once.
  4. Air-dry dove breasts on an oven rack for one hour.
  5. Preheat smoker or pellet grill to 225°F.
  6. Coat dove breasts lightly with olive oil, season generously with Hi Mountain Trail Dust.
  7. Place the rack with the dove breasts on the smoker/grill.
  8. Melt the butter and stir in the brown sugar until it is dissolved. Keep the glaze warm.
  9. After one hour, baste the dove breasts with glaze.
