Known as “tacos de pescado” in Spanish, traditional fish tacos feature grilled or fried white fish nestled in a soft corn tortilla and topped with cabbage, pico de gallo, and a tangy mayo-based sauce.
The modern fish taco gained popularity in the United States in the 1980s, inspired by the surf culture of Southern California. Rubio’s Coastal Grill is widely credited with pioneering the fish taco phenomenon in the U.S., introducing its Original Fish Taco on January 25, 1983, at a walk-up stand in San Diego. Using Hi Mountain’s signature Spicy Lime Blend Jerky Seasoning and Taco Seasoning, this recipe combines fresh fish, vibrant mango, zesty lime, and creamy Hi Mountain Ranch Dressing for a taco experience that is bursting with flavor.
Hi Mountain Seasonings Spicy Lime Tacos (Makes 6–8 tacos)
Ingredients:
- 1 lb walleye fillets (or other white fish)
- 1 Tbsp + 1/4 tsp Spicy Lime Blend Jerky Seasoning, separated
- 1/4 cup olive oil
- 2 cups chopped fresh mango
- 1/2 cup cilantro leaves
- 1 red onion, chopped
- 1/4 tsp Hi Mountain Taco Seasoning
- 6–8 corn tortillas
- 1 1/2 cup Queso Fresco cheese, crumbled (or Feta)
- 1 cup prepared Hi Mountain Ranch Dressing
- 3 limes, cut into quarters
Directions:
- Combine olive oil and 1 Tbsp Spicy Lime Blend Jerky Seasoning. Coat fish well and marinate 20 minutes. Mix mango, red onion, cilantro, juice of one lime, and 1/4 tsp Taco Seasoning; refrigerate.
- Add 1/4 tsp Spicy Lime Blend to Hi Mountain Ranch Dressing; mix and refrigerate.
- Heat tortillas in a skillet 1 minute per side; keep warm in oven.
- Sauté fish in a non-stick pan 4 minutes per side; flake into bite-sized pieces.
- Assemble tacos with fish, mango mixture, drizzle of spicy ranch, crumbled cheese, and lime wedges. Serve immediately.
